Whilst I don’t believe this recipe is something I created myself, I have dabbled a little and I’m quite enjoying it.
Here’s my take on the Egg and Avocado Wrap which is a perfect breakfast, brunch or lunch – Super quick to make and really filling!
*Salt and pepper (optional)
Break the eggs and mix them in a small bowl or cup.
Put your frying pan on low heat on the cooker, add a small teaspoon of coconut oil and allow it to melt.
Add the egg mixture to the frying pan and begin scrambling the mixture.
Whilst the eggs are cooking, you should peel your avocado, remove the stone and chop up into small pieces.
Place the wrap onto your plate, and lay the avocado on the wrap.
Once the eggs are cooked, they should look something like this.
Place the eggs on top of the avocado.
Begin folding the wrap
Ready to Eat!
